My favorite Disney canon stuff from the Prequel era is the Kanan comics (you need to watch the first season of Rebels to really get the emotional reactions the writer wants), Master and Apprentice (Qui-Gon and Obi-Wan), and Catalyst (about the Erso family from Rogue One). I'm sorry I can't help with the post-RotJ stuff.
